INGREDIENTS
Filling
- 🍓 1 pound fresh strawberries
- 🍋 ½ lemon, juiced
- 🍬 2 tablespoons white sugar
- 2 teaspoons cornstarch
Crust and Topping
- 1 ½ cups old-fashioned rolled oats
- ½ cup all-purpose flour
- ½ cup whole wheat flour
- 🍂 ½ cup packed light brown sugar
- 🧂 ½ teaspoon kosher salt
- ¼ teaspoon ground ginger
- 🧈 8 tablespoons unsalted butter, melted
STEPS
Preheat the oven to 375°F (190°C) and butter a 9x12-inch baking dish.
Dice the strawberries and combine with lemon juice, sugar, and cornstarch in a bowl. Stir until combined and set aside.
Mix oats, all-purpose flour, whole wheat flour, brown sugar, salt, and ginger in a bowl. Add melted butter and stir to coat evenly.
Press 60% of the oat mixture into the prepared baking dish and smooth into an even layer.
Spread the strawberry mixture over the crust with a slotted spoon, reserving any juice. Add remaining oat mixture on top and press lightly.
Drizzle reserved strawberry juices on top and bake until the top is golden brown, about 45 minutes.
Let the bars cool completely for 1 hour before cutting and serving.
