INGREDIENTS

- 2 teaspoons chili powder

- ⅛ teaspoon ground black pepper

- 3 large red bell peppers

- 2 (8 ounce) cans tomato sauce, divided

STEPS
Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
Place ground beef in a skillet over medium heat and brown for about 8 minutes, breaking it into crumbles. Drain excess fat.
Stir in taco seasoning, water, chili powder, cooked rice, salt, garlic salt, black pepper, and 1 can of tomato sauce. Mix thoroughly and simmer for 20 minutes.
Cut bell peppers in half lengthwise, remove stems, membranes, cores, and seeds. Steam peppers in a steamer insert for 3-5 minutes until tender.
Place steamed peppers into the prepared baking dish. Fill lightly with the meat mixture and press 1 Colby-Jack cheese cube into the center of each pepper filling.
Pour the remaining can of tomato sauce over peppers and cover with aluminum foil.
Bake in the preheated oven for 25-30 minutes until the peppers are tender and filling is hot.
