INGREDIENTS
Pasta
- 12 ounces dried campanelle or bowtie pasta
Protein
- 1 pound bulk Italian sausage
Vegetables
- 🍄 1 pound fresh mushrooms
- 🧅 1 large onion
- 🧄 3 cloves garlic
- 1 10-ounce package spinach
Condiments
- 1 tablespoon reduced-sodium soy sauce
- 1 tablespoon Dijon mustard
Dairy
- 🧈 5 tablespoons butter
- 2 cups half-and-half
- 1 cup cheese
Pantry
- 🌾 1/4 cup all-purpose flour
- 1 teaspoon thyme (or 1/2 teaspoon dried thyme)
- 🧂 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 cup reduced-sodium chicken broth
Topping
- 1 cup panko bread crumbs
- 2 tablespoons fresh parsley
STEPS
Gather all ingredients.
Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Cook pasta in a large pot of boiling salted water 2 minutes less than the suggested time on the package. Drain, reserving 1 cup pasta water. Return pasta to the pot.
Cook sausage in a skillet over medium heat until browned, about 8 minutes. Transfer to a plate with paper towels.
Add mushrooms, onion, and garlic to the skillet. Cook until tender, about 8 minutes. Add soy sauce and cook until absorbed, about 1 minute.
Transfer the mushroom mixture to the pot with the pasta.
Add 4 tablespoons butter to the skillet. Melt and whisk in flour, thyme, salt, and pepper. Cook for 1 minute.
Add broth, half-and-half, and mustard to skillet, stirring until thickened. Whisk in cheese and spinach until melted.
Combine sauce, sausage, and pasta mixture. Thin with reserved pasta water if needed. Transfer to the baking dish.
Melt remaining tablespoon of butter, mix with breadcrumbs and parsley. Sprinkle over pasta.
Bake in oven until browned and bubbly, about 30 minutes.
Garnish with parsley and serve.
