INGREDIENTS
Vegetables
- 4 green bell peppers, halved and seeded
Bread
- 🍞 1 (1 pound) loaf stale Italian bread, crumbled
Liquid
- 💧 ½ cup water, or more as needed
Oil
- 1 tablespoon olive oil
- 2 tablespoons extra virgin olive oil
Spices and Aromatics
- 🧅 1 small onion, chopped
- 🧄 2 cloves garlic, minced
- 🧂 ½ teaspoon ground black pepper
- ½ teaspoon crushed red pepper flakes
Seafood
- 🐟 1 (2 ounce) can anchovy fillets, chopped
Vegetable Garnish
- 8 pitted green olives, chopped

- 🍅 1 (15 ounce) can tomato sauce
STEPS
Preheat the oven to 350°F (175°C) and grease a large baking dish.
Arrange bell peppers with their cut sides up in the prepared baking dish and set aside.
Place crumbled bread into a large bowl and sprinkle with 1/2 cup water. Set aside to moisten.
Heat 1 tablespoon olive oil in a large skillet over low heat. Sauté onion until translucent. Add garlic and cook for 2 minutes.
Mix in moistened bread, anchovy fillets, olives, 2 tablespoons extra virgin olive oil, black pepper, and red pepper flakes. Stir well until stuffing is blended.
Stuff the prepared pepper halves with the bread mixture and arrange them in the baking dish.
Surround the peppers with tomato sauce and a small amount of water. Cover the dish with foil.
Bake in the preheated oven for 45 to 60 minutes, uncovering for the last 15 minutes and basting occasionally with sauce.
