INGREDIENTS
Pasta
- 8 ounces shell pasta
Seasonings
- ๐ง 2 tablespoons kosher salt
- 2 teaspoons chili powder
- 2 teaspoons hot sauce
Vegetables
- ๐ฝ 5 large corn
- ๐ 1 cup grape tomatoes
- 1/4 cup chopped cilantro
Dairy
- ๐ง 1 cup cotija cheese
- 1/2 cup sour cream
Condiments
- 1/2 cup mayonnaise
- ๐ 1/4 cup lime juice
STEPS
Bring a large pot of water to a boil. Add 2 tablespoons salt and pasta to water. Cook, stirring often, until pasta is tender with a bite, 9 to 10 minutes. Drain and rinse with cold water until lukewarm. Drain well and add to a large bowl.
Preheat a grill or grill pan to high heat. Place corn on grill and cook, turning occasionally, until half of each cob has charred grill marks, about 2 minutes on each side. Set aside until cool enough to handle.
Cut corn off of each cob and add to pasta. Reserve 1 tablespoon cilantro for garnish and add remaining cilantro, tomatoes, and cheese to the bowl.
In a separate bowl, combine sour cream, mayonnaise, lime juice, chili powder, hot sauce, and remaining salt. Whisk until well mixed.
Pour the dressing over the pasta mixture and toss well. Transfer to a serving bowl, garnish with additional cilantro, cheese, and chili powder as desired. Serve immediately or refrigerate until ready to serve.
