INGREDIENTS

- 🍅 2 roma (plum) tomatoes, seeded and chopped
- 1 red bell pepper, chopped
- 🥒 ½ English (seedless) cucumber - peeled, seeded, and cubed
Flavorings
- 2 tablespoons minced shallot
- 🍋 2 tablespoons fresh lime juice
- 1 tablespoon apple cider vinegar
- 🧂 1 ½ teaspoons salt, or to taste
- ¼ teaspoon freshly ground black pepper
For Serving
- 🧀 2 tablespoons crumbled feta cheese
- 2 tablespoons minced fresh cilantro
