INGREDIENTS
Vegetables and Condiments
- 🍅 ¼ cup oil-packed sun-dried tomatoes
- 1 teaspoon balsamic vinegar
- ⅛ teaspoon garlic powder
- 🧂 Salt to taste
- Ground black pepper to taste
Dairy and Eggs
- 🥚 6 large eggs
- ½ cup cottage cheese
- 2 ounces goat cheese
- 2 tablespoons heavy cream
- 🧂 ½ teaspoon salt

- 6 (4-ounce) mason jars
- Cooking spray
STEPS
Fill a large pot with water and place a sous vide immersion cooker into the water. Set temperature to 170°F (77°C).
Drain oil from sun-dried tomatoes, reserving 1/2 teaspoon. Finely chop tomatoes and combine in a small bowl with reserved oil, balsamic vinegar, garlic powder, salt, and ground black pepper.
Blend eggs, cottage cheese, goat cheese, heavy cream, and 1/2 teaspoon salt in a blender for 15-20 seconds until smooth.
Spray mason jars with cooking spray. Divide the tomato mixture among the jars evenly. Top with the egg mixture, and screw on the lids until barely tightened (do not over-tighten).
Submerge jars into the water bath. Cook for 55 minutes.
Remove jars from the water bath and let cool on a rack. To serve, run a knife along the edges of the egg bites and invert onto a plate or eat directly from the jars.
