INGREDIENTS
Dry Ingredients
- 1 cup white sugar
- 1 cup packed brown sugar
- 2 cups all-purpose flour
- ½ teaspoon baking powder
- 1 teaspoon baking soda
- 2 cups rolled oats
- 1 cup roasted and salted sunflower seeds
- 1 cup flaked coconut (Optional)
Wet Ingredients
- 1 cup butter, softened

STEPS
Preheat the oven to 350 degrees F (175 degrees C).
In a large bowl, cream together brown sugar, white sugar, and softened butter until smooth.
Beat in the eggs one at a time, then stir in vanilla extract.
Combine flour, baking powder, and baking soda; stir into the creamed mixture until just blended.
Mix in rolled oats and sunflower seeds. Add coconut if desired.
Drop dough by heaping teaspoonfuls onto ungreased cookie sheets. Leave room for spreading.
Bake for 10 to 12 minutes until cookies start to brown around the edge.
Let cookies set on the baking sheet before transferring to wire racks to cool completely.
