INGREDIENTS
Rice
- 💧 9 ¾ cups water
- 5 ½ cups Japanese sushi-style white rice
- 5 ½ tablespoons rice vinegar
- 🍚 5 ½ tablespoons white sugar
- 2 ¾ tablespoons kosher salt
Egg
- 1 teaspoon vegetable oil
- 🥚 2 eggs, beaten
- 1 tablespoon vegetable oil
- 1 tablespoon sake
- 1 tablespoon soy sauce
Vegetables
- 2 tablespoons sesame oil
- 1 eggplant, sliced lengthwise into strips
- 🥕 1 carrot, sliced into thin strips
- 1 tablespoon rice vinegar
- 1 tablespoon soy sauce
- 8 spears fresh asparagus
- 🥑 1 avocado
- 🍋 1 tablespoon lemon juice, or as needed
Nori Sheets
- 12 sheets nori (dry seaweed)
Fillings
- 1 (8 ounce) package imitation crabmeat strips, halved lengthwise
- 🥒 1 cucumber, seeded and sliced lengthwise into strips
- 1 (4 ounce) jar pesto
- 🍤 8 large cooked shrimp, coarsely chopped
STEPS
Bring water and rice to a boil in a large pot. Reduce heat to medium-low, cover, and simmer until tender and liquid has been absorbed, about 25 minutes. Remove from heat and let sit covered for 10 minutes.
Mix rice vinegar, sugar, and salt together in a microwave-safe bowl and microwave until warm. Add to rice and stir to coat evenly. Let rice cool completely.
Heat 1 teaspoon of vegetable oil in a small skillet and cook eggs until firm, about 3-5 minutes. Slice into strips.
Cook eggplant in a skillet with soy sauce, sesame oil, and sake until softened and lightly charred, about 5-10 minutes.
Microwave carrot strips with soy sauce and rice vinegar until softened, about 1-2 minutes. Drain.
Blanch asparagus in boiling water for 2-3 minutes, then transfer to ice water. Drain after cooling.
Slice avocado and drizzle with lemon juice.
Distribute rice onto each nori sheet, leaving 1/2-inch border.
Assemble rolls: Add fillings (such as crab, avocado, cucumber, carrot; or variations like eggplant and avocado, pesto and egg, or shrimp and asparagus) on top of rice. Roll tightly using a bamboo mat, seal with water, and cut each roll into 8 pieces.
