INGREDIENTS
Fish
- 2 fillets Suzuki fish
Vegetables
- 🍅 12 cherry tomatoes
- đź§… 1/4 onion, sliced
- Parsley, chopped as needed
Condiments
- 6 olives
- đź§„ 1 clove garlic, minced
- đź§‚ Salt and pepper to taste
Oils
- 2 tbsp olive oil
Seasonings
- 2 tbsp sake
- đź§‚ 1/3 tsp salt
- đź§‚ Pepper to taste
- 150 ml water
STEPS
Season both sides of the Suzuki fish with salt and pepper. Slice the onion thinly, mince the garlic, and chop parsley leaves while cutting the stems into thirds.
Heat olive oil and garlic in a pan over low heat until fragrant. Add the Suzuki fish skin-side down and cook on medium heat until golden brown, then flip.
Add cherry tomatoes, olives, onion, parsley stems, and the seasoning mixture (sake, salt, pepper, and water).
Cover the pan and simmer on low heat for 7–8 minutes. Remove parsley stems, plate the dish, and garnish with chopped parsley.
