INGREDIENTS
Chicken
- 🍗 1 piece (250g) chicken thigh
Coating
- 1 tbsp potato starch
Cooking Oil
- As needed salad oil
Garnish
- 1 tsp white sesame seeds
Marinade
- đź§„ 1/4 tsp grated garlic
- 1/4 tsp grated ginger
- đź§‚ A pinch of salt and pepper
Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1/2 tbsp sugar
- 1 tsp vinegar
- 1 tbsp soy sauce
- đź§‚ A pinch of pepper
STEPS
Trim excess fat from the chicken thigh and cut into bite-sized pieces.
In a bowl, mix the chicken with marinade ingredients (garlic, ginger, salt, and pepper), then coat with potato starch.
Heat salad oil in a frying pan over medium heat. Place the chicken skin-side down and cook for 2–3 minutes until browned. Flip and cook for another 2–3 minutes over low heat until fully cooked. Remove from the pan.
Wipe excess oil from the pan with a paper towel. Add sauce ingredients (sake, mirin, sugar, vinegar, soy sauce, and pepper) and heat over medium heat until slightly thickened. Return the chicken to the pan, mix well, and garnish with sesame seeds.
