INGREDIENTS

- 3 large lotus roots
- 1 cup cornstarch
- 2 cups tempura flour

- 2 tbsp gochujang
- 1 tbsp chili powder
- 3 tbsp corn syrup
- 2 tbsp soy sauce

- 1 tbsp plum extract
STEPS
Wash the lotus roots thoroughly, removing dirt and peeling the skin.
Slice the lotus roots into thin pieces.
Boil water with vinegar and salt, then blanch the lotus root slices for 5 minutes.
Drain the blanched lotus roots and pat them dry.
Coat the lotus root slices evenly with cornstarch.
Prepare a tempura batter using tempura flour and cold water, adding ice cubes to keep it chilled.
Dip the lotus root slices in the tempura batter and fry them in hot oil until golden brown.
Mix the sauce ingredients in a pan, adding a little water, and simmer until thickened.
Add the fried lotus root slices to the sauce and toss to coat evenly.
