This custard is sweet and creamy and is a wonderful dessert or a sweet treat as a snack.

Ingredients
- 1 cup cooked sweet potato, mashed
- 1/2 cup banana, mashed
- 1 cup fat-free evaporated milk
- 1/8 cup brown sugar
- 2 egg yolks, beaten
- 1/2 teaspoon salt
- 1 nonstick cooking spray
- 1/4 cup raisins
- 1 tablespoon sugar
- 1 teaspoon ground cinnamon

Wash hands with soap and water.

Preheat oven to 325 degrees F.

In a medium bowl, stir together sweet potato and banana.

Add milk, blending well.

Add brown sugar, egg yolks, and salt, mixing thoroughly.

Spray casserole dish with nonstick cooking spray. Transfer sweet potato mixture to casserole dish.

Bake in preheated oven for 35 minutes. Remove from oven.

Combine raisins, sugar, and cinnamon, sprinkle over top of sweet potato mixture.

Return to oven and bake 10 more minutes.
