INGREDIENTS
Sweet Potato Mixture
- 🍠 2 cups mashed sweet potatoes
- 🧈 ¼ pound butter, softened
- 🥚 2 eggs, separated
- 🟫 1 cup packed brown sugar
- 🧂 ¼ teaspoon salt
- 🌿 ½ teaspoon ground ginger
- 🌰 ½ teaspoon ground cinnamon
- ✨ ½ teaspoon ground nutmeg
- 🥛 ½ cup evaporated milk
- ⚪ ¼ cup white sugar
- 🥧 1 (9 inch) unbaked pie crust
STEPS
Preheat the oven to 400°F (200°C).
In a mixing bowl, combine sweet potatoes, butter, egg yolks, brown sugar, salt, ginger, cinnamon, nutmeg, and evaporated milk. Mix thoroughly.
Beat the egg whites until stiff peaks form, then fold in the white sugar.
Gently fold the egg white mixture into the sweet potato mixture.
Pour the sweet potato mixture into the unbaked pie crust.
Bake in the preheated oven at 400°F for 10 minutes, then reduce the heat to 350°F (175°C). Continue baking for 30 minutes or until the pie is firm.
