    • 🧅 100g onion, thinly sliced

    • 🥛 300ml unsweetened soy milk

    • 1/3 tsp consomme powder
    • 🧂 1/3 tsp salt

Peel and slice the sweet potato into 1cm pieces. Soak in water for 5 minutes and drain. Thinly slice the onion.

Heat butter in a pot over medium heat. Once half melted, add onion and sauté until coated. Cover and steam on low-medium heat for 2–3 minutes. Add sweet potato, stir, then add water, consomme, and salt. Bring to a boil, cover, and simmer on low heat for 7–8 minutes until sweet potato softens.

Turn off the heat and blend the mixture until smooth using a hand blender. Add soy milk and heat on low, stirring occasionally, until just before boiling.
