- 🍠 2 sweet potatoes
- 2 cups white sugar
- ¾ cup evaporated milk
- 🧈 ½ cup unsalted butter, melted
- ¼ cup dark corn syrup
- 🥚 2 eggs, lightly beaten
- 3 tablespoons all-purpose flour
- 2 teaspoons vanilla extract
- 1 teaspoon apple pie spice
- 🧂 ¼ teaspoon salt
- 1 (9 inch) unbaked deep-dish pie crust
STEPS
Preheat the oven to 350°F (175°C) and line a baking dish with aluminum foil.
Place sweet potatoes in the prepared baking dish and bake until easily pierced with a fork and skins loosen, 30-45 minutes.
Cool the potatoes, peel and discard skins, then transfer the potato flesh to a bowl.
Mash the potatoes and beat in sugar, evaporated milk, butter, corn syrup, eggs, flour, vanilla extract, apple pie spice, and salt until fluffy (about 5 minutes).
Pour the sweet potato batter into the pie crust. Reserve any excess batter for another use.
Bake the pie in the preheated oven until set and crust is browned, 45-50 minutes.
