STEPS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 3 nine-inch cake pans. Whisk together flour, baking powder, and salt in a bowl.
Cream butter until smooth, then mix in sugar until fluffy. Add egg yolks one at a time, then alternate mixing in flour and milk, followed by lemon peel and juice.
Beat egg whites to stiff peaks and fold into the batter until fully incorporated. Pour batter into prepared pans.
Bake cakes for 25–30 minutes until a toothpick comes out clean. Cool cakes for 10 minutes in pans, then transfer to rack to finish cooling.
Prepare filling by whisking sugar, lemon peel, lemon juice, flour, and beaten egg in a saucepan. Cook over low heat, whisking constantly until thickened; stir in butter, then cool.
Slice cooled cakes horizontally to create six layers total. Assemble by layering cake and applying the filling evenly between each layer, finishing with filling on top.
