Place vacuum-sealed bags into a sous vide water bath with the temperature set to 129°F (54°C). Cook for 1 1/2 hours.

Remove steaks from bags, pat dry with paper towels, and reserve thyme sprigs.

Heat a cast iron pan over high heat and add avocado oil. Sear steaks for about 45 seconds per side. Add 2 tablespoons butter and garlic while searing second side. Spoon melted butter on steak. Sear edges for 45 seconds each.

Remove steaks and set aside. Make red wine sauce by simmering wine, Worcestershire sauce, reserved thyme, and beef broth until reduced by half (about 4 minutes). Strain sauce through a fine mesh sieve and serve over steaks.
