INGREDIENTS
Chicken
- 🍗 4 large skinless, boneless chicken thighs
Sauces and Seasonings
- 1 cup teriyaki sauce
- 1 tablespoon tomato-based chili sauce
Cooking Spray
- 🧈 4 servings butter-flavored cooking spray
Deli Items
- 🍖 4 slices deli ham
- 🧀 4 (1 ounce) pieces low-fat string cheese
Miscellaneous
- 4 toothpicks
- 1 cup panko bread crumbs
STEPS
Place the chicken thighs between two sheets of heavy plastic and pound with the smooth side of a meat mallet to a thickness of 1/2-inch.
Whisk together the teriyaki sauce and chili sauce in a bowl, pour into a resealable plastic bag, add chicken, coat with marinade, and refrigerate for 18 to 24 hours.
Preheat oven to 350°F (175°C), and spray a 9x13-inch baking dish with butter-flavored cooking spray.
Remove chicken from marinade, shake off excess, and discard marinade. Lay chicken flat, layer ham and string cheese, roll tight, and secure with a toothpick.
Spray chicken bundles with cooking spray, coat with panko crumbs, and place into prepared baking dish. Spray again lightly.
Bake chicken bundles in preheated oven for 35 to 40 minutes, or until an instant-read thermometer reads 165°F (74°C).
