INGREDIENTS
Vegetables
- 1/2 medium head lettuce
- 1 medium green bell pepper
- 🍅 1 large tomato
- 1 small jalapeño pepper
- 🧅 1 medium red onion
- 🧄 2 cloves garlic
Dairy
- 🧀 2 ounces low-fat cheddar cheese
Proteins
- 1 can of black beans
- 1 pound lean ground beef
Grains
- 8 whole wheat flour tortillas
Frozen
- 2 2/3 cups frozen corn
Seasonings
- 1/2 cup water
- 3/4 teaspoon chili powder
- 🧂 1 teaspoon salt
- 1/4 teaspoon ground cumin
- dash ground black pepper
STEPS
Rinse lettuce, bell pepper, tomato, jalapeño, and onion. Peel garlic and onion.
Chop or shred lettuce into bite-sized pieces. Mince garlic. Halve the jalapeño and bell peppers, removing seeds, and dice them.
Grate tomato and onion using the coarse side of a box grater into a bowl. Collect all pulp and juices.
Grate cheddar cheese.
Drain and rinse black beans in a colander.
In a large skillet over medium-high heat, cook ground beef, bell pepper, and garlic until the beef is lightly browned. Drain any fat.
Stir in frozen corn, black beans, water, chili powder, cumin, and salt. Bring to a boil, reduce heat, cover, and simmer for 10 minutes or until most liquid evaporates.
To prepare salsa, mix grated tomato, onion pulp, jalapeño, and a pinch of salt in a bowl.
Fill tortillas evenly with meat mixture. Top each with grated cheese, salsa, and lettuce. Roll them up.
