INGREDIENTS
Base Ingredients
- 🧈 1 tablespoon butter, or as needed
- 2 tablespoons vegetable oil
- 🧅 1 medium red onion, diced
- 🧄 2 cloves garlic, minced
- 🥓 1 pound bacon, diced
- 1 medium red bell pepper, diced
- 3 medium jalapeño peppers, minced
- 🍺 1 cup beer, or more to taste
- 1 cup barbecue sauce
- 1 cup brown sugar
- ¼ cup molasses
- 6 cups cooked pinto beans
- 🧂 1 pinch garlic salt, or to taste
- Cracked black pepper to taste
STEPS
Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish with 1 tablespoon of butter.
Heat oil in a large skillet over medium-high heat. Sauté onion and garlic until onion begins to soften, about 5 to 7 minutes. Add diced bacon, red bell pepper, and jalapeños, cooking until bacon is browned, about 7 to 10 minutes.
In a large bowl, mix beer, barbecue sauce, brown sugar, and molasses. Stir in pinto beans, bacon-onion mixture, garlic salt, and pepper. Pour the mixture into the prepared baking dish.
Bake in the preheated oven until bubbling and browned, about 45 minutes.
