INGREDIENTS
Main Dish
- 🍗 Chicken breast 300g (cut into bite-sized pieces)
- Green curry paste 2 tablespoons
- 🥥 Coconut milk 400ml
- 🍆 Eggplant 2 pieces (cut into bite-sized pieces)
- 🌿 Basil leaves 10 pieces
- Fish sauce 2 tablespoons
- đź§‚ Sugar 1 teaspoon
- 🛢 Vegetable oil 1 tablespoon
STEPS
Heat vegetable oil in a pot and sauté the green curry paste for 1–2 minutes to bring out its aroma.
Add chicken breast and sauté until the surface turns white.
Add 400ml of coconut milk and 200ml of water, and bring to a boil over medium heat.
Add eggplant, fish sauce, and sugar, and simmer on low heat for 10 minutes until the ingredients are tender.
Sprinkle basil leaves as a finishing touch to enhance the aroma, then serve.
