INGREDIENTS
Peanut Sauce
- 1/3 cup crunchy peanut butter
- 1/3 cup soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon lime juice
- 🧄 1 clove garlic
- 1 (2 inch piece) fresh ginger
- 1 tablespoon toasted sesame oil
- 1/2 cup sweet chili sauce
- 1/4 teaspoon crushed red pepper flakes
Chicken Satay
- 1 tablespoon yellow curry paste
- 1 tablespoon honey
- 1 teaspoon ginger
- 🧄 1 clove garlic
- 1/4 cup coconut milk
- 1 tablespoon lime juice
- 1 teaspoon kosher salt
- 2 tablespoons vegetable oil
- 🍗 1 1/2 pounds chicken tenders
Cucumber Salad
- 3 large cucumbers
- 1 tablespoon salt
- 1/2 cup white sugar
- 1/2 cup rice wine vinegar
- 2 medium jalapenos, seeded and chopped
- 1/4 cup chopped cilantro
- 1/2 cup peanuts
Coconut Curry Noodles
- 4 ounces vermicelli rice noodles
- 1 cup coconut milk
- 1 tablespoon yellow curry paste
- 1 teaspoon sesame seeds (optional)
Garnish
- 1/2 cup shredded carrots
- 1/4 cup cilantro leaves
- 1/4 cup peanuts
STEPS
Mix all ingredients for peanut sauce until well blended, then refrigerate.
Mix ingredients for chicken marinade, toss chicken in it, marinate for at least 45 minutes.
Slice cucumbers, mix with salt, let drain for 30 minutes. Rinse and pat dry.
Prepare cucumber sauce by dissolving sugar and vinegar, add cucumbers, jalapenos, and cilantro.
Grill chicken tenders for about 2-3 minutes on each side, then bake in the oven until cooked through.
Cook rice noodles and mix coconut milk, curry paste, salt to prepare sauce. Mix noodles in and stir well.
Assemble platter with chicken, peanut sauce, noodles, cucumber salad, and garnishes.
