INGREDIENTS
Main Ingredients
- 2 pieces (280g) thick fried tofu
- 30g enoki mushrooms
- 30g shimeji mushrooms
- 30g king oyster mushrooms
- 1 tsp grated ginger
- chopped green onion, as needed
Mushroom Sauce Seasoning
- 1/2 tsp Japanese dashi powder
- 2 tsp sake
- 2 tsp mirin
- 2 tsp soy sauce
- 150ml water
Thickening Mixture
- 2 tsp cornstarch
- 2 tsp water
STEPS
Trim the enoki mushrooms and cut them into thirds. Separate the shimeji mushrooms into small clusters. Cut the king oyster mushrooms into bite-sized pieces.
In a pot, combine the mushroom sauce ingredients and bring to a boil over medium heat. Add grated ginger and the prepared mushrooms, cooking until tender. Turn off the heat and stir in the cornstarch-water mixture to thicken the sauce.
Wrap the fried tofu in paper towels and microwave on a heatproof plate at 600W for 2.5 minutes. Cut into quarters.
Place the tofu on serving plates, pour the mushroom sauce over, and garnish with chopped green onions.
