INGREDIENTS
Cookie Dough
- 1 cup unsalted butter
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 🥚 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 1/4 cups old-fashioned oats
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
Cream Filling
- 1/2 cup unsalted butter
- 4 ounces cream cheese
- 1 (13-ounce) jar marshmallow cream
- 1/2 teaspoon vanilla extract
STEPS
Preheat the oven to 350°F (175°C) with oven racks in the upper and lower thirds. Line two baking sheets with parchment paper.
Cream butter, brown sugar, and granulated sugar in a mixer on medium speed until light and fluffy (4-5 minutes). Add the egg and vanilla extract and mix until combined.
Incorporate flour, oats, cinnamon, baking soda, and salt into the mixture on low speed until evenly combined. Scrape down the sides and briefly mix again.
Drop teaspoon-sized balls of dough onto the prepared baking sheets, leaving 1.5-inch gaps. Stagger rows. Bake until edges are golden, 8-10 minutes.
Remove cookies from the oven and tap baking sheets on the counter to flatten. Cool cookies for 5 minutes, then transfer to a rack to cool completely.
Turn half the cooled cookies upside down in preparation for filling.
Prepare the filling: Beat butter in a mixer on medium-high speed until fluffy (3-4 minutes). Add cream cheese and beat for another 3 minutes. Scrape sides and mix again.
Add marshmallow cream and vanilla to the filling mixture and mix until incorporated.
Spread, spoon, or pipe approximately 1 tsp of filling onto the inverted cookies. Place the remaining cookies on top, pressing lightly to adhere.
Refrigerate assembled cookies for at least 4 hours (preferably overnight) to allow them to soften and the filling to set.
