INGREDIENTS
Cookie Dough
- 🧈 ½ cup butter, softened
- 🍚 ½ cup white sugar
- 🥚 2 eggs
- 🌾 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon allspice
- 1 tablespoon ground cinnamon
Frosting & Filling
- 🧈 ½ cup butter, softened
- 🧂 ⅛ teaspoon salt
- 🍚 3 cups sifted confectioners' sugar
- 🥛 ¼ cup milk, or as needed
- 1 ½ teaspoons vanilla extract
- 🍓 1 cup strawberry jam
- 🍒 1 (10 ounce) jar maraschino cherries, drained
STEPS
Preheat the oven to 350°F (175°C).
In a large bowl or stand mixer, cream together softened butter and white sugar until smooth. Beat in the eggs one at a time.
Combine flour, baking powder, allspice, and cinnamon, then stir into the batter until blended (expect stiff dough).
Roll dough on a floured surface to 1/8–1/4 inch thickness. Cut into circles and transfer to baking sheets.
Bake for 10 minutes, then cool on wire racks for 15 minutes.
Prepare frosting by beating butter and salt until soft, then mix confectioners' sugar, vanilla, and milk until smooth.
Spread jam onto a cookie, top with another cookie, add frosting, and place a cherry half in the center. Repeat for all cookies.
