INGREDIENTS
Rice
- 🍚 1 cup rice (washed)
Protein
- 🍗 200g chicken thigh
Vegetables
- 🍄 50g shimeji mushrooms
- đź§… 100g sliced onion
Oil
- 2 tbsp olive oil
Cheese
- đź§€ 30g pizza cheese
Herbs
- A pinch of chopped parsley
Seasoning
- 🍅 200g canned chopped tomatoes
- 2 tbsp ketchup
- đź§‚ 1/3 tsp salt
- 1/3 tsp consomme powder
- đź’§ 150ml water
STEPS
Cut the root off the shimeji mushrooms and separate them. Slice the onion thinly.
Cut the chicken into small bite-sized pieces.
Heat olive oil in a frying pan over medium heat. Add chicken and cook until the color changes. Add onion and shimeji mushrooms, and sauté until softened. Add rice and stir until it becomes translucent.
Add the seasoning ingredients (canned tomatoes, ketchup, salt, consomme, and water) and mix well. Bring to a boil, cover, and simmer on low heat for 15–20 minutes.
Turn off the heat, remove the lid, and sprinkle pizza cheese on top. Cover again and let the residual heat melt the cheese.
Heat on medium for about 2 minutes, sprinkle chopped parsley, and serve.
