INGREDIENTS

- ½ cup olive oil
- 🥔 2 pounds baking potatoes, peeled and cut into 1/4-inch slices
- Salt and pepper to taste
- 2 tablespoons olive oil
- 🧅 2 onions, sliced into rings
- 🥚 6 large eggs
- 1 roasted red pepper, drained and cut into strips
- 3 ounces Spanish serrano ham, chopped
- 2 tablespoons chopped fresh Italian parsley
STEPS
Heat ½ cup olive oil in a large skillet over medium-low heat. Cook half the potato slices until tender, 15-20 minutes. Transfer potatoes to a bowl, reserving oil.
Repeat with remaining potatoes, seasoning with salt and pepper. Transfer to the bowl.
Heat 2 tablespoons olive oil in another skillet. Sauté onion rings until soft and golden brown, about 15 minutes.
Whisk eggs in a bowl. Add cooled onions, roasted peppers, serrano ham, and cooked potatoes. Gently stir to combine.
In the skillet with reserved oil, pour the egg mixture and cook over low heat until sides set and bottom is golden, 8-10 minutes. Flip over using a plate and cook the other side for 4 minutes.
Slide the tortilla onto a plate and allow to cool to room temperature. Garnish with parsley and serve.
