INGREDIENTS
Dry Ingredients
- 5 cups all-purpose flour
- 2 teaspoons baking powder
- 🧂 ¼ teaspoon salt
Wet Ingredients
- 2 tablespoons shortening
- 💧 1 ½ cups boiling water
STEPS
Mix together the flour, baking powder, and salt in a large bowl. Cut in shortening to resemble cornmeal. Add water slowly, mixing with your hands to make a soft dough. You may not need all the water.
Knead the dough on a floured surface until smooth and elastic. Lubricate the top with oil, return to the bowl, and let rest, covered, for 10 minutes.
Divide the dough into small balls the size of golf balls and roll out to your preferred size and thickness.
Cook on a stove over medium heat using a cast iron grill or heavy skillet until the top is slightly bubbly. Turn to the opposite side and cook for another minute or two.
Keep the tortillas stacked and warm inside a clean dish towel.
