INGREDIENTS
Dough
- ☕ 1/4 cup espresso powder
- 🥛 2 cups milk
- 2 1/4 teaspoons dry yeast
- 🥚 1 large egg, beaten
- 2 tablespoons white sugar
- 🧂 3/4 teaspoon salt
- 🧈 6 tablespoons unsalted butter, melted
- 4 cups all-purpose flour, or more as needed
Filling
- 🧈 1/2 cup butter
- 3/4 cup brown sugar
- ☕ 1 tablespoon espresso powder
- 1 tablespoon cocoa
Icing
- 1 1/4 cups confectioner's sugar
- ☕ 3 tablespoons espresso or strong coffee, or more as needed
STEPS
Combine 1/4 cup espresso powder and hot milk in the bowl of a stand mixer, let cool to about 95°F.
Add yeast, egg, white sugar, salt, melted butter, and most of the flour. Knead into a smooth dough.
Remove dough, form into a ball, let rise in a warm place until doubled in size.
Prepare the filling: Melt butter, mix in brown sugar, cocoa, and espresso powder; stir to form a thick paste.
Deflate the risen dough, refrigerate overnight for best texture (optional).
Roll out dough into a 12x18 inch rectangle and spread the filling evenly, leave edges clean.
Roll the dough into a log, cut into 12 portions, and place into a greased pan.
Let the rolls rise in a warm spot until doubled in size.
Preheat oven to 375°F. Bake rolls until golden and puffed, about 30 minutes.
Whisk confectioner's sugar with espresso to make icing, then drizzle over cooled rolls.
