INGREDIENTS
Bottom/White Layer
- 🥚 6 egg whites
- ½ teaspoon cream of tartar
- 🧂 ¼ teaspoon salt
- ¾ cup white sugar
- ½ cup all-purpose flour
- ½ teaspoon vanilla extract
Top/Yellow Layer
- 🥚 6 egg yolks
- ¾ cup white sugar
- 🧂 ¼ teaspoon salt
- ¾ cup all-purpose flour
- 💧 ¼ cup boiling water
- ¾ teaspoon baking powder
- 1 teaspoon vanilla extract
STEPS
Beat egg whites with salt until frothy. Add cream of tartar and continue beating until stiff but not dry.
Sift ½ cup flour and ¾ cup sugar separately 4 times. Gradually add sugar to the egg white mixture, then fold in the flour. Add vanilla extract.
Pour the white batter into an ungreased angel cake pan.
Beat egg yolks until light. Gradually add ¾ cup sugar, sifted 4 times, and beat for 3 minutes.
Sift together flour and baking powder 4 times. Alternate adding this mixture and hot water to the yolk mixture. Add vanilla extract.
Pour the yellow batter over the white batter in the pan.
Bake at 325°F (165°C) for 40 minutes.
