    • 🧂 ¼ teaspoon kosher salt
  • For the Ganache

    • ½ cup white chocolate chips
    • ¼ cup heavy whipping cream
    • ¼ teaspoon ube extract

STEPS

1

Preheat oven to 325°F (165°C). Lightly spray a 9-inch springform pan with cooking spray. Wrap the pan's exterior with aluminum foil.

2

Mix graham cracker crumbs, melted butter, sugar, and salt in a bowl. Press mixture onto the bottom of the prepared pan.

3

Bake crust in preheated oven for 15 minutes. Allow to cool for 20 minutes.

4

Beat cream cheese until creamy. Add sugar, ube jam, and cream, mixing until smooth. Then add eggs one at a time, followed by ube extract, vanilla extract, and salt. Pour the filling into the crust.

5

Place the pan in a roasting pan and fill with hot water halfway up the side of the springform pan.

6

Bake at 325°F (165°C) for 55-60 minutes or until the center is almost set. Let cheesecake sit in the oven for 1 hour with the door ajar.

7

Cool cheesecake on a wire rack, remove foil, and refrigerate for at least 8 hours.

8

Melt white chocolate chips with heated whipping cream. Add ube extract and let cool. Once thickened, pour ganache over the cheesecake.

9

Refrigerate cheesecake with ganache for 20 minutes before serving.
