INGREDIENTS
Dough
- 5 cups all-purpose flour
- 🧂 1 teaspoon salt
- 🧈 2 tablespoons butter, softened
- 🥛 1 cup evaporated milk
- 💧 ½ cup water
Potato Filling
- 6 medium potatoes, cut into small cubes
- 🧅 2 large onions, finely chopped
- 🧈 ½ cup butter
- 🧀 1 cup shredded Cheddar cheese
- Salt and pepper to taste
Sauerkraut Filling
- 1 pound sauerkraut, drained
- 🧅 2 large onions, finely chopped
- 🧈 ½ cup butter
- 3 cups finely shredded green cabbage
- 1 cube chicken bouillon
- 2 teaspoons pepper
STEPS
Combine flour and salt in a large bowl. Make a well, add softened butter and evaporated milk, then gentlly mix. Knead and add water as necessary. Place dough in a greased bowl and let rest for 30 minutes.
For potato filling, boil potatoes until tender. Drain and mash. Sauté onions in butter until tender, then mix with potatoes, cheese. Season with salt and pepper.
For sauerkraut filling, sauté onions in butter until tender, then mix with sauerkraut, cabbage, bouillon, and pepper. Cook until excess liquid evaporates. Cool and grind through grinder.
Roll out dough to 1/8 inch thickness. Cut into 3-inch circles, add filling, fold, and seal into dumplings. Place on floured tray and cover.
Boil dumplings in batches for 3-5 minutes until tender. Drain and toss lightly in oil or butter to prevent sticking. Optionally, fry dumplings to achieve crispy surface. Serve with sour cream and fried onions.
