INGREDIENTS
Grits Base
- π§ 4 cups water
- π₯ 1 cup milk
- π§ 3 tablespoons butter
- π§ 1 1/2 teaspoons kosher salt
- 1 1/4 cups grits
- π½ 2 ears white sweet corn
- 1/4 teaspoon pepper
Gravy
- 1 1/2 teaspoons olive oil
- π₯ 6 slices bacon
- 4 ounces okra, thinly sliced
- π§ 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- π§ 2 cloves garlic, minced
- π§ 1 1/2 tablespoons butter
- 2 tablespoons all-purpose flour
- π 1 (10 ounce) can diced tomatoes with green chiles
- 2 cups chicken stock
- 1/2 teaspoon white sugar
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon hot sauce (optional)
Fried Shrimp Coating and Oil
- 2 cups peanut oil or other vegetable oil for frying
- π₯ 3 large eggs
- π€ 1 1/2 pounds shrimp, peeled and deveined
- 2 cups flour
- π§ 2 teaspoons kosher salt
- 1 1/2 teaspoons paprika
- 1 teaspoon pepper
- 1/2 teaspoon cayenne pepper
STEPS
Combine water, milk, butter, and salt in a large saucepan, bring to boil. Whisk in grits and simmer until thick, stirring often (25-30 minutes).
Cut kernels off corn, scrape cob for corn milk, stir into grits and cook until creamy (15-20 minutes). Stir in pepper and adjust seasoning.
Cook bacon in a skillet until crisp, set aside. Reserve drippings in skillet.
Add okra, salt, pepper, garlic powder, cayenne, and minced garlic to skillet. Cook until softened (5-7 minutes).
Melt butter in skillet, mix in flour to form a roux. Gradually whisk in tomatoes, chicken stock, sugar, Worcestershire, and hot sauce. Simmer for 10 minutes.
For shrimp, whisk eggs in a bowl, dip shrimp in eggs, and then dredge in seasoned flour (salt, paprika, pepper, cayenne).
Heat oil to 350Β°F (175Β°C). Fry shrimp in batches until golden (1-2 minutes each batch). Drain on wire rack.
Assemble the dish: Spoon grits into a bowl, top with gravy, fried shrimp, crumbled bacon, and green onions for garnish.
