INGREDIENTS
Main Ingredients
- 3 tablespoons olive oil, divided
- 1 (14 ounce) package extra-firm tofu, drained
- 🧂 ½ teaspoon salt
- Black pepper to taste
- 1 ½ teaspoons onion powder
- 1 ½ teaspoons garlic powder
- 🟡 ½ teaspoon ground turmeric
- 🍋 1 tablespoon fresh lemon juice
- 🧅 1 cup finely diced red onion
- 2 jalapeno peppers, seeded and chopped
- 🧄 3 cloves garlic, minced
- 🍅 2 cups chopped tomatoes
- 1 ½ teaspoons cumin
- ¼ cup chopped fresh cilantro
- 1 (15.5 ounce) can no-salt-added black beans, drained and rinsed
- 🥔 1 ½ cups cooked hash brown potatoes
- 🥑 1 avocado - peeled, pitted and sliced
- 1 teaspoon hot sauce, or to taste
STEPS
Preheat a large skillet over medium-high heat. Add 2 tablespoons of olive oil. Break tofu into bite-sized pieces over the skillet, season with salt and pepper, and cook until golden, about 10 minutes.
Add onion powder, garlic powder, turmeric, lemon juice, and 1 tablespoon of olive oil to the tofu and stir well. Cook for another 5 minutes.
Preheat another saucepan over medium-high heat and add olive oil. Sauté onions and jalapeños with a pinch of salt until translucent, about 5 minutes.
Add garlic to the saucepan and stir for 30 seconds until fragrant. Add tomatoes, cumin, and remaining salt. Cook until tomatoes soften and become saucy, about 5 minutes.
Stir in cilantro and lemon juice, followed by the black beans. Cook for an additional 2 minutes to heat through.
Assemble bowls by layering hash browns, the bean-tomato mix, and scrambled tofu. Top with avocado slices, a squeeze of lemon, and cilantro. Serve with hot sauce.
