INGREDIENTS
Seafood
- 80g grilled unagi
Vegetables
- 3 okra pods
- 150g peeled nagaimo
Condiments
- 1 tbsp concentrated mentsuyu
- 1/2 tsp wasabi
Toppings
- suitable amount of shredded nori
STEPS
Cut the grilled unagi into 2cm squares.
Rub okra with a pinch of salt on a cutting board, wrap loosely in plastic wrap, microwave at 600W for 30–40 seconds, then rinse with water and pat dry. Remove stems and slice into 5mm rings.
Peel the nagaimo, place it in a plastic bag, and crush it finely using a rolling pin or similar tool.
In a bowl, mix mentsuyu and wasabi, then add the unagi, okra, and nagaimo. Combine thoroughly. Serve in a dish and top with shredded nori.
