    • 🍬 1 tsp sugar
    • 1 tbsp soy sauce

    • 1 shiso leaf

Slice the chikuwa lengthwise and make small cuts inside and on the surface. Heat salad oil in a pan, cook the chikuwa until browned on both sides, then remove.

In the same pan, add the sauce ingredients (sake, mirin, sugar, soy sauce) and heat until slightly thickened. Return the chikuwa to the pan and coat with the sauce.

Mix the egg soboro ingredients in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 1 minute. Stir quickly to create scrambled eggs.

Serve the rice in a bowl, top with egg soboro and chikuwa, garnish with shredded shiso leaf and sansho powder, and drizzle with leftover sauce.
