INGREDIENTS
Protein
- 1 whole chicken
Vegetables
- 🥕 2 carrots, peeled and cut into 1-inch pieces
- 2 stalks celery, cut into 1-inch pieces
- 🧅 1 medium yellow onion, cut into 1-inch pieces
- 1 pound bean sprouts
- 2 (16 ounce) packages frozen French-cut green beans
Wrappers
- 2 (16 ounce) packages lumpia wrappers
Seasonings
- Salt and pepper
- ¾ cup soy sauce
- ½ cup unseasoned rice vinegar
- 3 cloves garlic, minced
Others
- 🥚 1 egg, beaten
- Vegetable oil for frying
STEPS
Put the chicken in a stockpot, cover with water, and add the carrots, celery, and onion. Boil, then simmer for 1 hour and 15 minutes until cooked.
Remove chicken, cool, and separate meat from bones. Boil stock and reduce by half for 10-15 minutes.
Strain the stock, season with salt and pepper. Add green beans and sprouts to the stock until tender (8 minutes). Cool filling for 15 minutes.
Wrap filling in lumpia wrappers using egg wash for sealing. Repeat until filling is used up.
Heat oil to 350°F, deep-fry lumpia until golden. Drain oil with paper towels.
Combine soy sauce, vinegar, and garlic to make dipping sauce. Serve with lumpia.
