INGREDIENTS
Cupcake Base
- 2 cups all-purpose flour
- 2 teaspoons baking powder

- 1 1/4 cups white sugar
- 🧈 3/4 cup unsalted butter, softened
- 🥚 3 large egg yolks, at room temperature
- 🥚 2 large eggs, at room temperature
- 2 teaspoons vanilla extract
- 1/4 teaspoon almond extract
- 1 (7-inch) vanilla bean
- 1 1/4 cups buttermilk, at room temperature
Espresso Frosting
- 2/3 cup heavy cream
- 3 tablespoons espresso powder
- 1 teaspoon vanilla extract
- 🧂 1/4 teaspoon salt
- 🧈 1 1/2 cups unsalted butter, at room temperature
- 6 cups confectioners sugar
STEPS
Preheat the oven to 350°F (175°C). Line two cupcake pans with liners.
Whisk together flour, baking powder, salt, and nutmeg in a bowl until combined.
Cream sugar and butter in a large bowl until light and fluffy, about 3 minutes. Add egg yolks and then eggs, mixing thoroughly. Add vanilla and almond extracts and beat until light and fluffy.
Scrape vanilla bean seeds into butter mixture and mix on low speed. Add half of the dry ingredients, mix until combined, then add buttermilk, followed by the remaining dry ingredients.
Divide batter evenly into prepared cupcake pans and bake for 25–30 minutes, until a toothpick comes out clean. Cool on a wire rack.
Prepare frosting: Simmer heavy cream with the reserved vanilla bean pod, then refrigerate to chill for 30 minutes.
Mix espresso powder, vanilla extract, and salt into the chilled cream. Cream butter and gradually add powdered sugar, followed by heavy cream mixture, mixing until light and fluffy.
Frost cupcakes with the prepared frosting.
