Peel and chop the potato into bite-sized pieces. Soak in water, drain, and microwave for 1 minute at 600W. Drain again.

Cut the root of the shimeji mushrooms and separate into small clusters. Remove the stems of cherry tomatoes and pierce them with a toothpick. Halve the garlic and remove the core.

Cut the block bacon into 1cm thick sticks.

Heat olive oil, salt, and garlic in a pan over medium heat until fragrant. Add bacon, potato, and shimeji mushrooms, cooking for 2–3 minutes until the mushrooms soften.

Add broccoli and cherry tomatoes, cooking for another 2–3 minutes while flipping occasionally until the broccoli is tender.
