INGREDIENTS
Pasta
- 1/2 pound medium shaped whole wheat pasta
Oil and Seasoning
- 1 tablespoon vegetable oil
- 1 tablespoon dried basil
Vegetables
- 1 red onion
- 2 cloves garlic
- 2 carrots
- 1 medium zucchini
- 1 red bell pepper
Tomato-based ingredients
- 1 can (14.5 ounces) low-sodium diced tomatoes
- 2 tablespoons low-sodium tomato paste
Dairy
- 1/2 cup plain yogurt
STEPS
Fill a pot halfway with water and bring it to a boil over high heat. Add the pasta and cook until just tender, about 12 minutes. Drain and set aside.
Heat a skillet over medium heat, add vegetable oil. Cook the onion, garlic, carrots, zucchini, peppers, and dried basil until soft and golden, about 20 minutes.
Add diced tomatoes to the skillet and simmer until the sauce comes together, about 20 minutes.
In a separate bowl, combine yogurt and tomato paste, stirring until smooth.
Move the vegetables in the skillet to one side. Gradually add the tomato paste mixture to the other side, stirring constantly. Cook over low heat for about 5 minutes until warmed through.
Combine the sauce and vegetables with the cooked pasta, stirring until well mixed.
