INGREDIENTS
Main Ingredients
- 🥚 4 eggs
- 🧀 1/2 cup of cottage cheese
- 🥔 1 potato (sliced thinly)
Spices and Vegetables
- 🧅 1/4 onion (chopped)
- 1/2 bell pepper (chopped)
- 1 tablespoon of olive oil
- 🧂 1/2 teaspoon of salt
- A pinch of pepper
- A few cilantro leaves (optional)
STEPS
Peel the potato and slice it thinly, then boil it in water for about 3 minutes.
Heat olive oil in a pan and sauté onion and bell pepper.
Whisk the eggs, add salt and pepper, and pour the mixture into the pan.
Evenly place the boiled potato slices on top of the eggs, cover, and cook on low heat.
When almost cooked, sprinkle the cottage cheese and cover to let the cheese melt.
Transfer the finished omelette to a plate and garnish with cilantro leaves.
