INGREDIENTS
Vegetables
- 3 large bell peppers
- 1/2 cup diced zucchini
- 🌽 1/2 cup canned corn
- 🍅 1/2 cup diced tomatoes

STEPS
Preheat the oven to 375°F (190°C).
Cut the tops off the bell peppers and remove seeds. Set aside.
In a bowl, mix cooked rice with zucchini, corn, diced tomatoes, smoked paprika, oregano, salt, and black pepper.
Stuff the bell peppers with the rice mixture and place them in a baking dish.
Bake for 30 minutes, then top with mozzarella cheese and bake for an additional 10 minutes until the cheese is melted.
