INGREDIENTS
Base
- π½ 1 (12 ounce) bag round tortilla chips
Vegetables
- 1 β tablespoons vegetable oil
- β cup chopped green bell pepper
- β cup chopped red bell pepper
- π§ β cup chopped green onions
- π 1 cup chopped tomato
- π½ Β½ cup frozen corn
- 1 pinch chili powder
- 1 pinch onion powder
- π§ 1 pinch garlic salt
Cheese and Toppings
- 8 ounces nacho cheese, or to taste
- 2 jalapeno peppers, chopped
STEPS
Place tortilla chips on a large serving plate.
Heat vegetable oil in a skillet over medium heat. Add green and red bell peppers and cook for 1 minute. Add chopped green onions and cook for 2 minutes more. Add chopped tomato and frozen corn, and cook for another 2 minutes while seasoning with chili powder, onion powder, and garlic salt.
Remove vegetable mixture from the skillet and set aside.
Place nacho cheese in a microwave-safe bowl and heat in the microwave for 2 minutes, or until warm.
Pour melted cheese over the tortilla chips, followed by the cooked vegetable mixture. Top with chopped jalapeno peppers. Serve immediately.
