INGREDIENTS
Tuna
- 🐟 12 ounces ahi tuna, cut into 1-inch chunks
- 1 tbsp olive oil
- 🧂 1/2 tsp salt
- 1/4 tsp ground pepper
Dressing
- 2 tbsp olive oil
- 🍋 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 🧂 1/4 tsp salt
- 1/4 tsp ground pepper
Vegetables
- 2 medium Vidalia onions, thinly sliced
- 🍅 4 medium-sized tomatoes, sliced
- 2 cups mixed greens
STEPS
Heat the grill to medium-high.
Whisk together dressing ingredients (olive oil, lemon juice, Dijon mustard, salt, and pepper) in a small bowl.
Cut the tuna into 1-inch chunks, skewer them on 3-inch skewers, brush lightly with olive oil, and season lightly with salt and pepper.
Grill the skewered tuna until fish is opaque and flakes with a fork (internal temperature of 145 °F); remove from the grill.
In a large bowl, toss the dressing with Vidalia onions, tomatoes, and mixed greens.
To serve, divide the salad onto four individual plates and top with grilled tuna.
