INGREDIENTS
Fish
- 15 wakasagi fish (80g)
Vegetables
- 1 piece of ginger, julienned
Seasoning
- đź§‚ A pinch of salt
- 50cc sake
- 2 tbsp mirin
- 🍬 2 tbsp sugar
- 3 tbsp soy sauce
- đź’§ 100cc water
STEPS
Wash the wakasagi fish and pat dry with kitchen paper. Sprinkle with a pinch of salt and let sit for 10 minutes. Pat dry again with kitchen paper.
Julienne the ginger. In a pot, combine sake, mirin, sugar, soy sauce, and water. Heat until boiling.
Add the wakasagi fish and julienned ginger to the pot. Cover with a drop lid and simmer on low heat for 20–30 minutes until the liquid is reduced.
