    • 2 tbsp vinegar
    • 1 tsp sliced chili

Wash the warabi and trim the tough root ends. Boil water in a large pot, turn off the heat, and add baking soda. Stir to cool slightly. Add warabi and let it soak for 6–8 hours. Rinse and cut into bite-sized pieces.

Place the warabi, salted kombu, and seasoning ingredients (★) into a storage bag. Massage gently and refrigerate for 30 minutes.
