INGREDIENTS
Vegetables
- 🧅 1 large onion, diced
- 🧄 1 large garlic clove, minced
- 🍅 1 (14.5 ounce) can stewed tomatoes
- 1 (15 ounce) can peas and carrots, drained
- 🥔 1 (15 ounce) can sliced white potatoes, drained
Protein
- 1 pound ground beef
Seasonings
- ½ teaspoon dried thyme
- 1 tablespoon all-purpose flour
Others
- 1 tablespoon vegetable oil
- 🧈 1 tablespoon butter, melted
STEPS
In a skillet over medium heat, cook onion and garlic in hot oil for 5 minutes or until softened. Remove to a plate.
In the same skillet, cook ground beef over medium-high heat until browned. Add flour and cook for 1 minute. Mix in stewed tomatoes and thyme, bring to boil, and simmer uncovered for 10 minutes.
Preheat oven to 450°F. Transfer mixture to a greased baking dish. Toss sliced potatoes with melted butter and arrange on top. Bake for 10 to 15 minutes until potatoes are golden.
