INGREDIENTS
Base Ingredients
- 🧈 2 teaspoons butter, divided
- 🍄 ⅓ cup sliced fresh mushrooms
- ¼ cup chopped green bell pepper
- 🍖 ¼ cup cooked ham strips
Eggs
- 🥚 2 eggs, beaten

- 🧂 Black pepper, to taste
STEPS
Melt 1 teaspoon butter in a small skillet over medium heat. Add green onions, mushrooms, and bell pepper. Cook until tender, about 300 seconds. Stir in ham until heated through, about 60 seconds. Season with salt and black pepper, then transfer the mixture to a small bowl and keep filling warm.
Beat eggs together in a separate bowl. Season with salt and black pepper.
Heat the same skillet over medium-high heat, adding the remaining 1 teaspoon butter. Heat until butter foams, then pour in the beaten eggs. Cook for 30 seconds, lifting omelet edges for uncooked egg to run below. Repeat this process until the top is set but still moist and soft, about 120 seconds.
Arrange the filling over one side of the omelet, fold the other half over the filling, and slide the omelet onto a plate.
