INGREDIENTS
Dry Ingredients
- 1 cup walnuts
- 1 ½ cups old-fashioned rolled oats (not instant)
- ⅓ cup whole wheat flour
- ½ cup ground flax meal
- 1 teaspoon baking soda
- 🧂 ½ teaspoon salt
- 1 teaspoon ground cinnamon
Wet Ingredients
- ½ cup almond butter
- ¼ cup canola oil
- ¼ cup blue agave nectar
- ⅓ cup brown sugar
- 🥚 1 egg
- 1 teaspoon vanilla extract
Mix-ins
- ½ cup dried cherries
- 1 cup semi-sweet chocolate chips
STEPS
Preheat the oven to 375°F (190°C). Line baking sheets with parchment paper.
In a food processor, pulse the walnuts several times to chop, then continue processing until ground into flour. Transfer to a bowl. Mix in the rolled oats, whole wheat flour, flax meal, baking soda, salt, and cinnamon until combined.
In the food processor, combine almond butter, canola oil, agave nectar, brown sugar, egg, and vanilla extract. Blend for a few seconds. Transfer to a large bowl.
Fold the dried cherries and chocolate chips into the almond butter mixture. Mix in the walnut-oatmeal mixture until a thick dough forms.
Scoop heaping teaspoons of dough and form into balls. Place on the prepared baking sheets, spaced about 2 inches apart.
Bake the cookies in the preheated oven for 8 to 10 minutes, until lightly browned. Flatten them with a spatula after baking and let cool on baking sheets for 5 minutes before transferring to wire racks.
